THE ART OF TASTING

A journey through the unique aromas, palate, and perfect gastronomic pairings of Simposiarca.

In the Glass

A brilliant straw-yellow color with luminous highlights, crowned by an incredibly fine, persistent perlage and a creamy, delicate mousse.

On the Nose

Fresh and floral at first, slowly unfolding into complex, elegant layers of dried fruit, toasted bread crust, and a bright touch of candied citrus.

On the Palate

Remarkable structure balanced by electric freshness. It is bone-dry and clean, leading to a deeply savory, mineral, and long-lasting finish.

Aperitifs & Seafood

A flawless choice for high-end raw seafood, oysters, elegant fish appetizers, and light, crispy fried delicacies.

Piedmontese Traditions

Its vibrant acidity cuts beautifully through the richness of traditional agnolotti del plin, vegetable flans, and rich cheese fonduta.

Local Terroir & Cheeses

Pairs magnificently with regional charcuterie and Robiola di Roccaverano goat cheese, crafted just a few hills away from our estate.

THE STORY & PHILOSOPHY

Our pride and joy from the high-altitude hills of Loazzolo. Simposiarca 2020 is a rare, single-vintage Blanc de Noirs crafted from 100% Pinot Noir. With an ultra-limited production of only 5,000 bottles, this Metodo Classico is a true insider’s gem.
As a Brut Nature (zero dosage, with residual sugar below 3 g/l), it is the purest, most uncompromising expression of our unique clay-limestone soil: crisp, bone-dry, and wonderfully complex.
To preserve its vibrant, mouth-watering acidity, we prevent malolactic fermentation. The wine then undergoes a patient, slow maturation on the lees for 44 months, followed by an additional 3 months of refinement in the bottle before release.
